This summer, the idea for Flamingo Estate's White Truffle Olive Oil took root in the forests of Forcoli, Italy, where the founder and their mother joined the Savini family, who have been truffle-hunting these woods for generations. Led by Luca Campinotti and his trio of extraordinary dogs, the group spent the morning moving through dappled light and fallen leaves, watching the dogs circle and scratch before gently unearthing the treasure below. The scent of warm earth and oak leaves, and the thrill of discovery, became the genesis of this olive oil. White truffles are nature's greatest riddle. Their season is fleeting, their growth a mystery - hidden beneath oak and hazelnut trees, found only through instinct, patience, and the keen noses of trained dogs. They refuse cultivation, appearing only where soil and rain conspire just right. That uncertainty is their magic: a wildness that cannot be tamed.
